Slightly hotter pizza

One part of the Brazilian shrimp stew was diced tomatoes w/ chili. Thanks to the nice taste I got an idea to use it in a pizza sauce instead of regular diced or crushed tomato.

In turn chicken and pineapple fit well with hot tastes and as a result we then had a pizza which probably was the best pizza ever. We have made one pizza after another and it is always just as delicious. And the best part is it is just as delicious when warmed the next day.

TIME TO MAKE: rising the dough one hour, making and baking pizza 40 minutes

INGREDIENTS:

Dough:

  • 3 dl water (lukewarm)
  • 25 gr fresh yeast
  • 1 teaspoon of salt
  • wheat flour
  • vegetable oil

Fillings:

  • 5 dl can diced tomatoes w/chili
  • 1 yellow onion
  • 5 garlic cloves
  • oregano, basil
  • some salt and black pepper
  • 200 gr chicken slices
  • curry powder, salt, white pepper, paprika powder
  • 3-4 pineapple rings
  • 1-2 jalapenos
  • about 300-400 grated pizza cheese

Put about three decilitres of lukewarm water in a suitable sized bowl. Add crumbled yeast and salt.
Start to knead dough with wheat flour.
Add flour little by little until the dough is quite firm but still soft enough and still sticks to your hands. Then add ½ dl of vegetable oil, mix well and let rise in a warm place under a towel for about one hour.

In the meantime you can make the sauce.
Peel and cut the onion into very small pieces. Saute in oil with crushed garlic cloves for a few minutes.

Add diced tomatoes and spices (salt, pepper, oregano and basil). Taste and add salt if needed. Let simmer for about 10 minutes and set aside.

Fry chicken until evenly cooked. Season with salt, pepper, paprika powder and curry. Set aside.

Cut the pineapple rings into small pieces (or however you prefer the size to be). Clean the seeds of jalapenos and cut them into thin rings.

Preheat the oven to 250°C (482°F)

After rising (1 hour) put the dough on parchment paper. Pat it first thin with your hand and then continue with a rolling pin until you have a sheet about the size of a big baking tray. Then move the dough and the paper onto the baking tray.

Spread the tomato sauce evenly on the dough sheet. Add cheese, as much as you want.

Add chicken, pineapple and jalapenos.

Bake on the middle rack until the dough is evenly cooked with brownish edges and the cheese is evenly melted.
