
I have already added the recipes for chocolate and vanilla mascarpone cream earlier. This time I did a version with berries, where I used calorie free Stevia-sweeteners instead of sugar. Instead of Stevia, you can use other sugar free sweeteners as well. I also used vanilla extract instead of vanilla sugar.
Sweeteners, as the name implies, are really sweet – so you want to add just a bit, and taste the cream as you make it. Vanilla extract has a lot more taste to it compared to vanilla sugar as well, so after adding one teaspoon you really want to have a taste and check if you want to add more.
I used 2 Stevia tables, and the result could have been a bit more sweet for my taste. At the same time though, my daughter thought the cream was just perfect as it was – to each their own. And of course, you can use normal sugar and vanilla sugar instead when making this dish if you wish to.

TIME TO MAKE: 30 minutes
INGREDIENTS:
- 4dl whipping cream
- 150g mascarpone cheese
- 2 Stevia tablets
- ½ dl ground almonds
- 1 teaspoons of grated lemon peels
- 40g blueberries (fresh or frozen)
- 60g raspberries (fresh or frozen)
Whip the cream until it’s thick.
Add mascarpone cheese and mix well.
Then add rest of the ingredients: ground almonds, sweeteners, lemon peels and berries. Mix well.
Put in the fridge for couple of hours before serving to get nicely firm cream.
