Creamy celery and zucchini soup

Really tasty creamy soup made of celery and zucchini. There is just nothing more to say about it, it is simply good! Go ahead and try!

PORTION: 2-3 servings
TIME TO MAKE: 30 minutes


  • 4-5 celery ribs
  • 1 zucchini weighing about 400 g
  • 1 vegetable stock cube
  • 1 yellow onion
  • 5 garlic cloves
  • 1-2 dl cream
  • salt, black pepper
  • a handful of chopped fresh parsley
  • some lemon juice

Cut the celeries and zucchini and put them in a pot. Press the garlic cloves, chop the onion and add them to the pot.

Add some vegetable stock, but just enough to completely cover the vegetables.

Cook for about 20 minutes. When the vegetables are evenly cooked, pour out the stock into another pot (not away, because you still need it) and mash them. After that pour the vegetable stock back and add some cream (1-2 dl), toss well.

Let the soup still simmer for a while. Add salt and black pepper to your taste if needed. Finish it with a handful of finely chopped parsley and some lemon juice.
