Zucchini and halloumi patties with smetana sauce

Once again my darling old spouse brought me a new recipe with all the ingredients needed for making food out of them. He asked if we could try it. And forced I was, because the ingredients were already purchased and the recipe was quite interesting and easy to make.

As a result we got a very good side dish which goes really well with meat, poultry or fish.

Instead of yogurt sauce I made it with smetana which is more to my taste.You can by all means try yogurt (see the original recipe) if you’d rather go with that.

I also used some salt, though halloumi is quite salty in itself. Not too much, but some…

PORTION: 2 servings
TIME TO MAKE: about 30 minutes


  • 300 – 400 gr zucchini
  • 200 gr halloumi
  • 1 egg
  • (some salt)
  • olive oil for baking
  • Fresh arugula

Grate the zucchini and squeeze all the liquid away as much as you can. Grated zucchini has to be as dry as possible, otherwise the patties will be too sloppy.

Grate halloumi.

Mix all the ingredients well and cook in oil with a mild heat on a pan. Let the patties brown on both sides.
