
Few weeks ago I published a recipe for tuna salad in my blog. Now in turn I made a quite similar salad from chicken. As I earlier said in the case of tuna salad, this kind of filling, easy-to-make and eaten cold salad fits very well together with warm summer days.
I ate this kind of salad several years ago at my grandchildren’s birthday party. For some reason I had totally forgotten the whole salad, but when I visited my daughter a few weeks ago, she was just making it. So I asked for a recipe, made some and the result was very good and tasty.
As in all salads, choosing the ingredients is for each to freely decide. However, it has to be noted that in chicken salad one needs of course at least chicken, and in this very salad a sauce made of feta and sour cream.
Nowadays I live all alone (with my dogs) and I couldn’t eat the whole portion at one go, but – this salad won’t get worse in the fridge. On the contrary, the taste gets even better.
PORTION: 2-3 servings
TIME TO MAKE: 20 minutes
INGREDIENTS:
- 150 gr honey-marinated chicken
- 100 gr feta
- 100 gr sour cream
- 1 garlic clove
- 3 dl boiled pasta
- Iceberg salad
- cucumber (70-80 gr)
- 7 cherry tomatoes
- 1 spring onion stem
- (salt, curry powder, paprika powder)
Boil pasta in slightly salted water. Pour in a sieve and rinse with cold water. Put pasta back in a hot pot, add some vegetable oil and toss well. Let cool down.
Cut the chicken in small pieces and bake them well. Add some salt, paprika curry if needed. Let cool down.
Cut cucumber in small pieces and tomatoes in halves. Cut the Iceberg salad and put them all in a serving bowl.
Mince the feta and mix it with sour cream. Add one garlic clove (pressed). Toss well.
Pour the sauce in the bowl and toss well all the ingredients. Cut some spring onion on the top.
