
With the keywords “sweet and spicy chicken” we ended up on a website called Taste of Home and this recipe. And of course we had to make it right away, because the whole family just loves hot and spicy food (nowadays I consider myself also a friend of it).
Very easy and quick made food, the taste of which was a positive surprise. Peach preserves adds just a touch of sweetness, while taco seasoning and salsa give this dish some kick.
The original recipe says: “This entree can be made even zippier yet by adding more taco seasoning and using spicier salsa.” I still would give a word of warning: I rather recommend to use taco seasoning just as the recipe advises. I once used more, which made the sauce taste somewhat fusty – in other words it spoiled the taste at least for me.
PORTION: 3-4 servings
TIME TO MAKE: 20 minutes
INGREDIENTS:
- 250-300 gr boneless chicken breasts
- 3 tablespoons of taco seasoning
- 1-2 tablespoons of vegetable oil
- 2 dl chunky salsa
- 2 dl peach preserves
Cut the chicken breasts into ½-inch cubes.
Place taco seasoning in a large shallow dish, add chicken cubes and turn to coat evenly.
In a large skillet, brown chicken in oil until no longer pink.
Combine salsa and peach preserves, stir into skillet. Bring to a boil.
Reduce heat, cover and simmer for about 2-3 minutes or until heated through.
Serve with rice.
