Pan fried potatoes and vegetables

This kind of stew does not necessarily need a recipe to prepare it, one just uses those ingredients he or she likes or happens to have. It is good when served with any kind of meat or fish, but tastes great just in itself.

PORTION: 3 servings (as a side dish), 2 servings (main dish)
TIME TO MAKE: 25 minutes

INGREDIENTS:

  • 200 gr French fries
  • ½ small cabbage
  • ½ small zucchini
  • ½ 4-5 artichoke bottoms (preserved)
  • 1 red bell pepper
  • 1 small tin of champignons
  • 1 yellow onion
  • salt, black pepper

Cut the cauliflower into small florets and put in a small bowl. Add some water and cook in the microwave for about ten minutes. Drain.

Cut the bell pepper, zucchini and onion. Cut the artichoke bottoms in suitable sized pieces.

Heat up some oil in a frying pan and then add all the ingredients. Turn every now and then during frying. Add salt and pepper (and any kind of herbs to your taste). The stew is ready when all the ingredients are evenly cooked and partly nicely brown.
