Meat skewers remind of summer, sun, warm evenings and grilling and as a matter of fact we mostly make them during summertime. Skewers are easy to make in the oven as well and they even taste almost as good as the ones made outdoors, missing just a slight aroma of smoke and fire.
In the opening photo there are skewers filled with ingredients we mostly use, though you could choose anything from chicken to fish and any kind of vegetables or fruits could be used as a part of the puzzle.
My metal skewers are 28 cm long. I own a tray with small notches on the edges, just suitable for my skewers to keep them in place. It’s possible that those notches are meant to be just adornments, but they serve well in this purpose too.
PORTION: 6 skewers
TIME TO MAKE: marinating 24 hours, preparation about 30 minutes, grilling about 20 minutes
- 200 gr pork roast
- 200 gr beef sirloin or tenderloin
- 12 cherry tomatoes
- 12 fresh champignons
- 12 bacon slices
- goat cheese spread
- 1 dl olive oil
- 4-5 garlic cloves
- 1 teaspoon of salt
- black pepper
- lemon juice
- a handful of fresh chopped parsley
Cut meat on in suitable sized cubes.
Press garlic cloves into oil and add all the other ingredients, mix well.
Put the meat cubes in a bowl, pour in the marinade and mix. Let season in the fridge for about 24 hours and stir a few times during seasoning.
Arrange your cooking rack so that the top of the broiling dish will be 10-20 cm from the top. The closer to the heat, the quicker to cook. If you want to cook longer, use the middle rack.
Preheat the oven to the highest temperature and turn on the broiler.
Clean the champignons and cut off the leg to make a nice little hole in the middle.
Fill with goat cheese spread and wrap with a bacon slice.
Cut the zucchini in suitable sized pieces.
Layer all the ingredients sequentially or in desired order onto the skewers, work to fit 4-5 steak pieces onto each skewer.
Oil with the rest of the marinade and put on a baking tray. Grill until all the ingredients are evenly cooked. Turn occasionally.
