
As said, this is only a version of numerous, different kinds of vegetable stews made in the oven. Smetana, goat cheese and honey bring their own special flavor to the food and moreover, this dish is really filling.
You can do this with or without bacon if you don’t like it or you don’t eat meat at all. And if just the bacon is the problem, you can use f.ex. milled meat, chicken or fish as a substitute.

TIME TO MAKE: preparation about 30 minutes, cooking about one hour
INGREDIENTS:
- ⅓ big sweet potato or 1 small
- 6-8 Brussels sprouts
- 1 big turnip
- 3 carrots
- ½ zucchini
- ½ red bell pepper
- 1-2 chili peppers
- 70 gr leek
- 100 gr smoked bacon in small cubes
- 100 gr fresh or dried boletes
- 1 small red onion
- 120 gr smetana
- 3-4 tablespoons of goat cheese spread
- 1 tablespoon of honey
- 80 gr butter
- 2 teaspoons of finely roughed sea salt
- olive oil
- vegetable oil
- 3 eggs
- black pepper
- paprika powder
- salt
Preheat the oven to 200°C (428°F)
Peel carrots, turnip, sweet potato and onion.
Cut all vegetables in suitable size pieces, size them to your taste. Cut Brussels sprouts in half.
Clean the seeds from chili peppers and cut the chilis into small pieces.
Chop the onion finely.
Oil a frying pan and fry boletes with chopped onion and bacon cubes. Season lightly with paprika powder and black pepper. If using dried boletes, soak first and squeeze the water well off before frying.
Melt the butter and mix with honey, finely roughed sea salt and some black pepper.
Mix together carrots, turnip, sweet potato, paprika, chili, Brussel sprouts and leek in a big bowl. Pour in the seasoned butter and mix well. Spread the mixture evenly on an oiled baking tray. Pour some olive oil on the vegetables evenly. Bake on the middle rack for 30 minutes.
Add in zucchini, fried boletes/bacon/onion, smetana and goat cheese. Mix well and bake for 20 minutes.
Carefully break the eggs on the surface so that the yolks remain intact and sprinkle some salt on them. Bake for 10-15 minutes or until the eggs are cooked to your taste.
