And how come I yet again ended up making food from the ingredients forgotten in the fridge? You can use whatever root vegetables there happen to be in your own fridge and the result should be just as good. This casserole can be eaten on its own, but this is also an excellent side dish for meat, fish or poultry.
PORTION: about 4 servings (as a side dish)
TIME TO MAKE: peeling and cutting takes their own time, but in the oven this delicacy will be ready in 30 minutes
- 100 g celeriac
- 150 g turnips
- 150 g sweet potatoes
- 150 g red beets
- 80 g butter
- 1 tablespoon of honey
- 1 teaspoon of rosemary
- 1 teaspoon of thyme
- ½ teaspoon of salt
- ½ teaspoon of black pepper
Preheat the oven to 220°C (438°F)
Ingredients of the casserole shown in the main picture.
Cut all the root vegetables in small cubes. Melt the butter and mix it with honey. Put all the ingredient and spices into a suitable bowl and toss them well.
