
Two summerly fresh, sweet and very simply salads made of melons. The one in the first photo contains only vegetables, but by all means mix in some parmesan chips. roasted halloumi, roasted pine seeds or seed blends with them as well. Salad number two contains parmesan chips.
I say nothing about the quantity – use just as much as you want and need.
In my salads I prefer to use vegetable oil instead of olive oil. Once I made a salad which somehow ended up with a slightly bitter taste, and I discovered that this bitterness was due to the olive oil. Olive oil is just great when used in marinades and when roasting or baking food, but in my experience it does not go too well with fresh salads. This is of course just my personal opinion based on my own experience, and as I always say – to each his or her own.
Salad 1.
Ingredients:
- Cantaloupe melon
- cucumber
- green onion
- curly endive
- salt (just a pinch)
- 2 teaspoons of sugar
- lemon juice
Remove the skin from the melon, remove all seeds and dice the flesh.
Dice the cucumber as well.
Tear the curly endive in small pieces and cut one frond of a green onion in very small pieces.
Put it all together and make a dressing of vegetable oil, lemon juice, sugar and salt and pour it in. Toss well.
Salad 2.
Ingredients:
- Piel de Sapo melon
- arugula salad
- red paprika
- green onion
- parmesan chips
- sugar
- salt
- lemon balsamic vinegar
Remove the skin from the melon, remove all seeds and dice the flesh.
Tear the curly endive in small pieces and cut one frond of a green onion and a half of a red pepper in very small pieces. Use lemon balsamic vinegar as a dressing or make one like in the previous salad.
Salad 3.
Ingredients:
- Galia melon
- cucumber
- iceberg lettuce
- grapes
- 1 teaspoon of sugar
- just a little pinch of salt
- white balsamico sauce
Remove the skin from the melon, remove all seeds and dice the flesh.
Dice the cucumber as well.
Tear the curly endive in small pieces and grapes in halves.
Put it all together and add sugar, salt and balsamico sauce. Toss well.
